Oat cookies are one of my favourites. I love the texture, crisp / crunchy edge and the chewiness from the oats.. and they’re simple and quick to make!

Over the weekend, I was craving some freshly baked chocolate chip oat cookies. These are super delish! But I do try my best to avoid becoming the cookie monster.. as I want to enjoy them slowly and see them as a sweet treat. Difficult I must say! That is why I don’t make big portions unless I have a lot of friends or family around, just having 1-2 a day is like a yummy treat for me.

If you would like to make more, just simply double up the recipe below.

Makes 12-14 cookies

Ingredients
1 and 1/4 cup of rolled oats
1 cup of all purpose flour
1/2 cup brown sugar
1/4 cup granulated sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1 large egg
2 teaspoons of vanilla extract
1/2 cup canola oil
1/2 – 3/4 cup of dark chocolate chips or chocolate chunks, your preference
Chopped walnuts (optional)

 

Steps:
Preheat the oven to 180c / 350f

In a large mixing bowl, add all ingredients in excluding the chocolate chips

Combine until the dough is moist and mixed thoroughly. The dough should be crumbly.

Add the chocolate chips and give it a good mix. You can also add some chopped walnuts in there which tastes really good too!

Take a tablespoon of dough, and using your hands, squeeze the dough into a ball. If the mixture is not holding, add little bit more oil. Place on a tray with non-stick baking sheet, flatten each ball slightly and repeat process.

Bake for 10 -12 minutes or until lightly golden, place on cooling rack

Ready to eat!!

Once fully cooled down and if you even have any left… store them in a tightly sealed container in a cool, dry area. You could separate each cookie with a small piece of baking paper, this will help the cookies maintain its crisp/crunchiness and eat within 3 days.
