Do you like carrot cake? If you do, this is for you. These are one of my favourite healthy snacks – healthy carrot cake in the form of oat bars! Don’t expect them to taste and have the same texture as the actual fluffy cake version though, these are a healthy, healthy bar version. These make a great replacement of those supermarket purchased unhealthy granola bars. These carrot cake oat bars are healthy, tasty and filling. They make a great ‘on the go’ snack bars or if you have no time to grab breakfast in the morning.

Makes 12 bars

1.5 cup of cake flour
1 cup of rolled oats
2-3 tablespoons of brown sugar
2 cups of grated carrots
1 teaspoon of baking powder
1/4 teaspoon of salt
1 teaspoon of cinnamon
2 tablespoons of milled flaxseeds
6 tablespoons of water
2/3 cup of canola oil
1 teaspoon of vanilla extract
Add walnuts / chia seeds / desiccated coconut / raisins etc (optional)


  1. Preheat oven to 180c / 350f
  2. Line a greaseproof baking paper in an 10″x 10″ pan
  3. In a big bowl, whisk together the flour, oats, baking powder, salt, sugar, cinnamon and vanilla extract
  4. Add water and oil
  5. Fold in the grated carrots, milled flaxseeds and optional ingredients
  6. Place the mixture into the prepared pan and spread to cover the entire pan
  7. Smooth the top with a spatula
  8. Bake for 25-30 minutes, test with a toothpick – if it comes out clean it’s done
  9. Place on cooling rack while kept on baking sheet
  10. Slice when cooled down
